From their first visit to the Cuchara Valley, Chris and Mary Beth Cipoletti fell in love with the awesome scenic beauty and its people. They were met by friendly smiling faces, panoramic views and the warmth that captures the entire valley. In May of 2000, the Cipolettis purchased the La Veta Inn. It had been sleepy for several years, and its restaurant closed, but begging to be reopened. Since the Cipolettis took over, this sleepy inn has become a destination of choice in La
Veta.

Chris and Mary Beth have upgraded and updated all the guest rooms with new paint, bedding and linens. Guests find hair dryers, soaps, shampoos, conditioners, lotions and bath gels. Rooms now offer phones and data ports for business travelers or those who want to keep in touch while away from
home. The inn and restaurant have been transformed into a cozy environment for those who are staying overnight or merely stopping by to dine. Hardwood floors have been installed throughout the lobby, restaurant and bar. The courtyard, with its outdoor fireplace, has become the center of attention for diners who relax with a meal or a beverage in front of the roaring fire during the evenings.

And the food has never been better. The evening chef, Jeff Martin, was asked to participate in the 2002 Spirit of the West Taste of Elegance Competition to be held in Denver during February. This prestigious event features some of
Colorado's finest chefs displaying their talents by showcasing the versatility of pork.
It's quite an honor just to be asked to participate in the competition.
The Cipolettis have put much thought, effort and dedication into making their inn a gathering place for the community by volunteering their services for community events. They and their children have been smitten by La Veta. They agree,
