Since opening in July 2004, Andy’s Smokehouse has become a
very popular stop for locals as well as tourists and travelers passing through
Walsenburg. Andy is by no means a newcomer to the barbeque trade. He's spent
years refining his smoking skills, and its popularity has grown tremendously in
just one year. He just added another concession trailer and two more smokers to
his operation in anticipation of another outlet at Lathrop State Park just four
miles west of Walsenburg. Plans are in the works for his new ‘sit down
place’ as he calls it. Construction should start by mid-September. “It’s
just going to be beer and barbeque in a simple western atmosphere,” is how
Andy puts it. “A fancy building isn’t going to make my barbeque taste any
better,” he says. When asked what is good, he says “all of it”. But what
is becoming a trademark for his business is his smoked tamales. If you want the
best in slow-smoked traditional barbeque, stop by and see Andy at his location
next to Safeway in Walsenburg, or as Andy puts it, “Just roll down your window
and follow your nose — you’ll find us.”
