THE FINE ART OF FOOD
n April of 1994 sisters Karen Briggs and Sally Greer took their first steps toward
the realization of a long time fantasy -- to establish a cooking school in a rural area.  One that would attract visitors from all over the country who were interested in cooking and experiencing this amazing part of the Southwest. As they stood on the newly acquired property, almost two acres of land at the southern most perimeter of La Veta, the ladies realized they were at the beginning of a true adventure!

Now, five and a half years later, they operate Legends Park Cooking School in a darling little, old house remodeled for that purpose. Lots of hard work and some good luck have helped along the way. 

A wonderful article in the Denver Post during June of '97 literally put them on the map. The school also received publicity in Health Magazine, September of '98, American Health in May, '99 and in a publication called Dollar$ense in articles promoting cooking school vacations. Then, American Health put the school on a list of the top healthy cooking classes in the country. Several nice articles in local newspapers completed the picture.

In addition, to the sisters cooking school, they operate Legends Park Restaurant specializing in the same healthy, gourmet food that is taught in class. "Customers come from all over Colorado, and other parts of the country to dine on food that not only tastes delicious but is good for you," remarks Karen. "Serving lunch and dinner Mondays, Wednesdays, and Fridays, and dinner on Saturday evenings gives us lots of opportunity for new expression and variety in menus that change almost daily."

The ladies had a green house built to assure themselves a year round supply of the freshest herbs and blossoms for food preparation. Also, a large gazebo stands at the back of the property, surrounded with wild flowers, and the focal point of what will become a beautiful park-like setting for concerts and outdoor eating extravaganzas.

"Our goals right now are to continue to learn more about good food, improve our business in every way, and continue to attract wonderful, interesting people who become our customers and friends," adds Sally
