It all started for Dave Bird and his family when he spied a "for sale" sign on a historic sandstone building in Walsenburg,
CO. He made a telephone call, met with the owner, and the next thing you know he was heading back to Las Vegas, sending his
wife flowers, telling her he loved her, and trying to be nonchalant as he broke the news: "Oh, by the way, Honey, we just
bought a building..." Before his wife could get too upset, Dave explained that his father had moved to this valley in 1994
for its beauty and friendliness and that he, too, saw this as the perfect place to live their dreams. The added benefit would
be being close to his father and sisters, and the ability to give his family the quality of life that can only be found in a
small town.

512 Main Street in Walsenburg
A little over a year later the remodel was complete, and the Blue Rooster Bar and Grill in Walsenburg opened its
doors on November 18, 2005. During the spring of 2007, Dave once again "found a building" when The La Veta Pub and Grub came
up for sale. He saw this as a wonderful opportunity to open a second location in this valley and once again, his wife
received flowers.

923 Oak Street in La Veta
The Blue Rooster Bar and Grill in La Veta opened its doors June 29, 2007 -- giving the valley two locations to
choose from, with kitchens that serve delicious food 7 days a week, 11 a.m. to 9 p.m. daily. The menu varies slightly by
location but includes slow-cooked ribs, steaks, finger foods, and the fiesta menu featuring fresh Mexican dishes.
Regardless of location, what you really notice is that Dave and his family have worked hard to create an atmosphere
where you will feel welcomed, relaxed, and at home. It doesn't matter which side of the valley you happen to be on, whether
you are 6 or 60 --- the Rooster is a great place to eat, meet friends, catch a game, or just hang out! Stop by once, and you
will feel like part of the family.
